Vinification Syrah and Mourvèdre grapes are sorted, de-stemmed,
and vinified separately in a traditional way before
blending. The century-old Carignan is hand-harvested
and then vinified in a specific way: the maceration of
whole grapes in an atmosphere that is naturally
saturated in carbonic gas.
Soils Our vineyards are situated on Clamoux and Balcons de
l’Aude terroirs. This provides us with a variety of soils,
chalky sandstone and eroded marl that allows us to
compose with various combinations of flavours and
colours and to choose the best terroir for each grape
Accompagnement This wine will go well with fine meat dishes in sauce,
grilled meat and cheeses.
Characteristics Colour: Deep red.
Nose: Elegant nose, candied fruits aroma’s with spicy
Mouth: Full-bodied, with spicy flavours on the finish. A
good structure that emphasises silky tannins.
